Served on their own or accompanied with a side of eggs, these tasty blackberry hazelnut waffles are guaranteed to blow your brunch guests away. Combine the ingredients before your crew arrives, cover the bowl with plastic wrap, and store in the fridge until you’re ready to cook.

The hazelnut-flavored dish boasts a ton of benefits, including antioxidants, healthful fat, and some bonus plant protein, says Health's contributing nutrition editor, Cynthia Sass, RD. Hazelnuts also contain vitamin E, magnesium, and manganese, and eating them has been shown to help reduce blood markers for inflammation, Sass adds.

Sass also points out that oat flour is rich in minerals, B vitamins, and antioxidants, and provides soluble fiber, which helps increase fullness, support digestive health, and lower cholesterol.

Blackberries are one of the lowest sugar fruits and are packed with antioxidants, fiber, and vitamin c, Sass tells us. So, don’t hold back when it comes to topping your waffles with these berries. “They also support brain health."

How to Make It

Step 1

Preheat a waffle iron. Whisk together hazelnut meal, oat flour, baking soda, salt, and cardamom in a medium bowl until blended. Make a well in center. Add milk, yolks, coconut oil, vanilla, and 2 tablespoons of the syrup to well, and whisk until completely blended.

Step 2

Stir together yogurt and lemon zest in a small bowl. Combine blackberries and remaining 1 tablespoon maple syrup in a separate small bowl.

Step 3

Beat egg whites in a separate bowl with an electric mixer on high speed until stiff peaks form, about 2 minutes. Fold whites into hazelnut mixture. Spray iron liberally with cooking spray. Pour batter into each waffle iron cavity (use 1/3 cup for a Belgian iron; 1/4 cup for standard); cook until browned and lightly crisp on edges, about 4 minutes. Transfer to a serving plate. Repeat with rest of batter.

Step 4

Top with yogurt mixture and berries; garnish with lemon zest. Serve immediately.
